Bandaged Cheddar Extra Aged ~ Firm
British farmhouse-style cheddar is cloth-bound and cave aged for big flavor and a great balance.  Aged 2+ years. 

LaValle WI           
Apple-Smoked Cheddar ~ Semi-Firm
This cheese is an ivory white cheddar, smoked over applewood. The rind is smeared with Hungarian paprika creating a wonderful delight.  Aged 4-6 months. 
∞ Beer Pairings - Black Ale, Porter, Stout
∞ Wine Pairings - Try Chardonnay or a Sparkling White, or Riesling

Caved Aged Marisa ~ Semi-Firm
This natural-rind variety gets its complex, sweet and slightly rambunctious flavors from open-air cave aging.  A high butterfat content balances the cheese's inherent saltiness with a rich creaminess that deepens as Cave-Aged Marisa ages. Runner up - Best of Show 2011 American Cheese Society.
∞ Beer Pairings - Scotch Ale, IPA, Gray's Oatmeal Stout
∞ Wine Pairings - Sparkling wines or Chardonnay, Syrah or Cabernet Sauvignon

Mobay ~ Semi-Soft    
The flavor of Mobay is both delicate and rustic. The sweetness of the sheep's milk is balanced out by the bright tang of the goat's milk. It is interesting to try each layer separately and then together, for a variety of flavor profiles. 2nd Place in its class 2004 and 2005 American Cheese Society Competition.
∞ Beer Pairing - Try a Hinterland Amber Ale
∞ Wine Pairing - Chenin Blanc, Vouvray, Sangiovese or Chianti

Snow White Goat Cheddar ~ Semi-Firm
Cave aged semi-firm white goat cheddar cheese.  Aged for 6 months.  Packaged in ½ lb. pieces.
∞ Beer Pairings - New Glarus Fat Squirrel, or any lager or nut brown ale
∞ Wine Pairings - Chardonnay, Riesling, Rose, Syrah, or Cabernet Sauvignon

EDELWEISS CREAMERY Monticello WI                         
Emmentaler ~ Semi-Firm
Using heat treated grass-fed milk from two nearby dairies, Edelweiss Emmentaler is made in copper vats into 180-lb. wheels.  The flavor is sweet, nutty and sharp. Aged 12-26 months.
∞ Beer Pairings - Pilsners, Lagers, and hard ciders are all good choices
∞ Wine Pairings - Riesling, Gewurztraminer, Chardonnay, Pinot Noir or Chianti

Monroe WI 
Buttermilk Blue ~ Semi-Soft
Raw milk from predominantly Jersey cows in Wisconsin.  Fruity and buttery with rich blue flavor. 
∞ Beer Pairings - Imperial/Double IPA
∞ Wine Pairings - Riesling, Sparkling, Sangiovese/Chianti

GranQueso ~ Firm

Blue Ribbon Award Winner inspired by Spanish Manchego, the rind has reddish, basket-weave pattern.  Sharp with a sweet finish  Aged 6+ months. American Cheese Society, 2010 1st Place.

Grand Cru Gruyere SurChoix ~ Semi-Firm
An extra aged Gruyere made in a copper-lined vat, washed-rind and cellar-cured with intense nutty and caramel notes.  
∞ Beer Pairings - Any Octoberfest beers, Blue Moon, and Capitol Island Wheat.
∞ Wine Pairings - Riesling, Gewurztraminer, Pinot Noir or Rioja

Marieke's Gouda-Style Cheese ~ Semi-Firm
A farmstead, Dutch-style Gouda cured to perfection on cedar planks, mature with a sweet caramelized flavor.  Ask our cheesemonger for our current aged selection.
∞ Beer Pairings - Craft brews like a seasonal Winterland or Luna Stout.
∞ Wine Pairings - Chardonnay for white or Merlot or even Cabernet Sauvignon for red.

Foenugreek  Flavored Gouda ~ Semi-Firm
A farmstead, Dutch-style Gouda with foenegreek - a seed that is traditional in Holland with a nutty, maple-like flavor.
∞ Beer Pairings - A Blonde or Cream Ale such as Spotted Cow from New Glarus
∞ Wine Pairings - Chenin Blanc, Riesling or Chardonnay, try an Italian Dolcetto for red

Evalon Goat Cheese ~ Semi-Firm
A delicious raw goat milk farmstead cheese with a sophisticated and subtle flavor. Aged over 70 days.  2011 US Champion.

∞ Wine Pairing:  Sauvignon Blanc and Vouvray, Chianti and Rijoa for reds

Shullsburg WI                 
Dunbarton Blue ~ Semi-Firm
One of our most popular Artisan cheeses, Dunbarton Blue is an English-style cheddar with just a hint of blue and a rustic, natural rind. Open air cave-cured to perfection for six months on wooden shelves.   Our best selling Artisan Cheese.

Red Rock ~ Semi-Firm
A new creation by Chris Roelli, creamy and sliceable cheddar with a hint of blue that is cellar-aged with a natural blue rind. It's striking color is created by twice the amount of annatto than a regular cheddar.  A beautiful and delicious addition to your cheese flight!

Montamore ~ Firm
A taste reminiscent of an aged premium cheddar balanced by a full-flavored Parmesan. Won first place at the 2010 American Cheese Society Awards.

SarVecchio  ~ Firm
Wisconsin Original Cheese inspired by Parmesan.  Dry with deep golden interior, a pronounced caramel aroma, and crunchy calcium lactate crystals.  Made with pasteurized milk, and aged 22+ months.

A young cheese, mild but full of flavor with a buttery body reminicsient of European table cheeses.  From raw cow's milk, aged over 60 days.

Green Fields ~ Semi Soft
A semi-soft, washed rind cheese from raw cow's milk, aged 70 days, inspired by Trappist Monk cheese.  Sweet nutty tones vary with the seasons. 
∞ Beer Pairings - Trappist-style Ales, so try Chimay or Belgian imports, Sprecher Belgian Style Dubbel, or New Glarus Thumbprint Chocolate Abbey

Dodgeville WI           
Pleasant Ridge Reserve ~ Semi-Firm
A raw milk alpine style cheese that is made only during the grazing season when cows are pasture fed. Nutty with subtle floral notes creating a caramel flavor that matures with age. The most celebrated cheese in the U.S.  Aged 9+ months.  Winner of the ACS Best In Show award three of the past ten years.

Pleasant Ridge Reserve Extra Aged ~ Semi-Firm
In the tradition of Alpine cheeses like Gruyere and Beaufort, this raw milk extra-aged beauty is rich with layers of caramel and intriguing subtle floral notes. Aged over 18 months, the only cheese to have won Best of Show in the American Cheese Society competition on three separate occasions.   Aged 16+ months.
∞ Beer Pairings - Try a Bock or Porter.
∞ Wine Pairings - Gewurztraminer or Viognier for whites, a Zinfandel for red, and at dessert with sherry or a late harvest Riesling.

Rush Creek Reserve ~ Soft
Rush Creek Reserve is inspired by the French Vacherin Mont d'Or, and is bound in spruce bark, which gives shape to the soft round and imparts a sweet, woodsy flavor to the cheese. Combined with the savory flavors born from the rind, this gives the custard-soft paste a deep but delicate richness.  Aged 60 days. 
∞ Beer Pairings - beer, something malty and sweet and some hops. Probably not porters or Scotch ales.
∞ Wine Pairings - Gewurztramineror Viognier for whites, a Zinfandel for red, and at dessert with sherry or a late harvest Riesling.
